The Practical Lab & Counter Course is an internship held in the Artico Gelato School laboratory. It is open to all students of the professional course "Opening My Gelato Shop" who want to deepen their practical skills and simulate daily lab and counter tasks in a gelateria. Participants will gain added value through increased confidence and awareness in managing operational challenges, addressing them with structure, order, and precision. This course is also suitable for those who have previous experience in the gelato industry and wish to enhance their skills to navigate the job market more easily and with greater opportunities. The module consists of 15 hours and will be conducted in the afternoons of the third week of the professional course.

  • 3 afternoons of hands-on lab experience, from 3 PM to 6 PM, during which various flavors of artisanal gelato will be made.
  • 2 afternoons at the counter, from 3 PM to 6 PM, providing practical experience in managing the display case and preparing cones and cups.
All professional course participants who choose to join the Practical Lab & Counter Course will receive a complimentary first consultation with Antartico, a company within the Artico group, for a complete and personalized gelato shop design.

FEDERICO FUSCO: our chef

Born in 1988, Neapolitan by origin but now Milanese by adoption, he enters the doors of Artico gelateria in 2016 full of inexhaustible enthusiasm and passion.
He begins his experience as a sales assistant but with an eye always turned towards the laboratory, where the following year he is welcomed by his teacher Maurizio Poloni.
His passion and his desire to do lead him to follow the lessons of our school to improve himself more and more and transform his passion into a profession.
The Artico laboratory has become his second home, and his ambition leads him to join the teaching staff of Artico Scuola where he will pass on his experience and his knowledge, teaching “practical laboratory techniques” to future ice cream makers
